The Healing Power of Immune Boosting Soup [Recipe]

Winter is in the air as the fall harvests are reaching a close so gather up these fresh immune boosting ingredients for this healing soup.

This easy soup consists of four primary healing foods that you can probably find at your local farmer’s market.  A solid antioxidant good for both heart and gut health are the tart apples. Throw in the immune boosting spices that also help reduce inflammation, bacteria and fungi.  Next are shiitake mushrooms that are also immune system builders and cardiovascular aids.  Topped off with another antioxidant and immune system booster, potatoes, which also contain magnesium and potassium for blood pressure help and vitamins A, B6, and C.

Use the recipe below combining these healing ingredients to make a spicy, creamy curry coconut soup. Share what you think.

Coconut Curry Soup with Apples

Ingredients:          (Serves 4)

  • 1 onion, chopped
  • 1 Tablespoon ginger, fresh minced
  • 2 cloves garlic, fresh minced
  • 2 Tablespoons curry powder
  • 2 teaspoons pepper, fresh ground
  • 2 small apples, tart, cubed
  • 2 medium potatoes, cubed (yellow are creamier)
  • 4 cups vegetable broth or water
  • 1 cup coconut milk
  • 2 handfuls shiitake mushrooms, fresh or Dried Shiitake Mushrooms
    & re-hydrated, cut into quarters
  • parsley for garnish (optional)

Directions:

Sauté onions until translucent (adding tablespoons of water as needed). 

Stir in ginger, garlic, curry powder, and pepper for about one minute.immune-onions

Add apples, potatoes, broth, and coconut milk simmering until potatoes are tender, about 15 to 20 minutes. (Liquid should cover apples and potatoes.)

Puree the soup until smooth using immersion blender or regular counter blender.

Return the soup to the pot and add the skiitake mushrooms. Simmer 10 minutes stirring frequently.  immune-shiitake

Spoon up, top with parsley and enjoy!
